[RECIPE] Chicken Curry (Easy!)

SERVES 5


INGREDIENTS

  • Olive oil

  • 5- 6 cloves of garlic

  • 1 tsp of cumin seeds

  • 1 bay leaf

  • 600g of chicken breast

  • 100ml of coconut milk

  • 1 tsp of turmeric and garam masala

  • Chilli powder to taste

  • 70g of tomato concentrate

  • Handful of chopped coriander

  • A few coriander leaves for garnishing

  • Salt and pepper


STEPS

  1. (Préparation) Mince the garlic cloves, cut the chicken breast into cubes, mix turmeric, garam masala and chili powder in a bowl.

  2. When the oil is hot enough, add the minced garlic and stir fry for 1-2 minutes before adding cumin seeds and bay leaf. Continue stirring for a few minutes.

  3. Add in the turmeric, garam masala, chili powder mixture and stir for a bit.

  4. Add the tomato concentrate, a bit of water and stir.

  5. Add in the chicken and a pinch of salt and stir till the chicken turns slightly brown.

  6. Then add in the coconut milk, stir and let the curry sit under low heat for about 5-7 minutes.

  7. Once the chicken is cooked, add the coriander leaves for the final garnishing and you’re good!
