[RECIPE] Chicken Curry (Easy!)

SERVES 5
INGREDIENTS
Olive oil
5- 6 cloves of garlic
1 tsp of cumin seeds
1 bay leaf
600g of chicken breast
100ml of coconut milk
1 tsp of turmeric and garam masala
Chilli powder to taste
70g of tomato concentrate
Handful of chopped coriander
A few coriander leaves for garnishing
Salt and pepper
STEPS
(Préparation) Mince the garlic cloves, cut the chicken breast into cubes, mix turmeric, garam masala and chili powder in a bowl.
When the oil is hot enough, add the minced garlic and stir fry for 1-2 minutes before adding cumin seeds and bay leaf. Continue stirring for a few minutes.
Add in the turmeric, garam masala, chili powder mixture and stir for a bit.
Add the tomato concentrate, a bit of water and stir.
Add in the chicken and a pinch of salt and stir till the chicken turns slightly brown.
Then add in the coconut milk, stir and let the curry sit under low heat for about 5-7 minutes.
Once the chicken is cooked, add the coriander leaves for the final garnishing and you’re good!
